In addition to maintaining support for existing clients during 2003, Simon regularly undertakes consultancies with the UN FAO, including a 6 month consultancy with the FAO/WHO Codex Secretariat in Rome, to assist with the 26th session of the Codex Alimentarius Commission in July 2003, the implementation of the Codex Evaluation and the development of the Codex General STandard for Food Additives (GSFA). 

Simon also participated in the 61st meeting of the Joint FAO/WHO Expert Committee on Food Additives (JECFA) as a WHO adviser.
